  • 2 large sweet potatoes, peeled and diced

  • 1 medium onion, diced

  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil and sauté the onion until softened (3–4 minutes). Add ground turkey and cook until browned (5–6 minutes).
  3. Stir in garlic, red bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper. Cook for another 3–5 minutes.
  4. Transfer the mixture to the greased baking dish and cover with foil. Bake for about 25 minutes.
  5. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10–15 minutes until cheese is melted and bubbly.
