  • 4 large eggs
  • 4 tbsp sweetener (erythritol, monk fruit, honey, or maple syrup)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 1/2 cups berries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease your baking dish.
  2. Blend cottage cheese until smooth in a blender.
  3. Add eggs, sweetener, vanilla extract, cornstarch (or keto alternative), and blend until combined.
