  • 1 and 1/2 cups almond flour
  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup chocolate chips
  • 1 tsp coconut oil
  • Flaky sea salt (optional)

Instructions

  1. In a large bowl, combine 1 and 1/2 cups almond flour, 1/4 cup nut butter, 1/4 cup maple syrup, 2 tablespoons melted coconut oil, 1 teaspoon vanilla extract, and 1/4 teaspoon salt. Mix until smooth.
  2. Place parchment paper on a cutting board and transfer the mixture onto it. Press firmly into an even layer about half an inch thick.
  3. In a microwave-safe bowl, melt 1 cup of chocolate chips with 1 teaspoon coconut oil in short intervals until smooth.
  4. Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally, sprinkle with flaky sea salt.
  5. Freeze for about 10 minutes until set. Cut into pieces and enjoy!
