  • 1 medium spaghetti squash
  • 1 tbsp olive oil
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • ½ cup plain Greek yogurt
  • 1½ cups shredded sharp cheddar cheese (divided)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Optional: ¼ tsp paprika or dried thyme

Instructions

  1. Preheat oven to 400°F (205°C). Slice spaghetti squash in half and scoop out seeds. Brush with olive oil and place cut-side down on a baking sheet. Roast for 35-40 minutes until tender.
  2. In a skillet over medium heat, sauté diced onions in olive oil for about 5 minutes. Add minced garlic and sauté for an additional minute.
  3. Once the squash is cool enough to handle, shred it into strands using a fork.
  4. In a large bowl, mix shredded squash with sautéed onions, garlic, Greek yogurt, 1 cup of cheddar cheese, salt, pepper, and optional spices.
  5. Transfer mixture to a greased casserole dish. Top with remaining cheese and bake at 375°F (190°C) for 20-25 minutes until bubbly and golden.
