  • 1 tbsp butter
  • 1 leek
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • Fresh thyme leaves
  • Fresh parsley (for garnish)

Instructions

  1. In a large Dutch Oven, melt the butter over medium heat. Add leeks, carrots, celery, and thyme; sauté until softened for about five minutes. Stir in the pressed garlic and cook for one more minute.
  2. Sprinkle in flour and stir well. Gradually add chicken stock while scraping any browned bits from the pot. Bring to a gentle boil and season with salt and pepper.
  3. Add potatoes, cooked turkey, and bay leaves to the pot. Cover and transfer to a preheated oven at 350°F (180°C) for about 45 minutes.
  4. If desired, stir in double cream before serving and garnish with fresh parsley.
