1 pound skirt steak
2 tablespoons chipotle peppers in adobo sauce
2 tablespoons avocado or olive oil
2 tablespoons fresh lime juice
1 red bell pepper (sliced)
1/2 yellow onion (sliced)
1 bag (10 oz) riced cauliflower
Instructions
Marinate the skirt steak with chipotle peppers, oil, lime juice, cumin, salt, and pepper for at least one hour.
Preheat the oven to 400°F. Toss sliced bell pepper and onion with oil, salt, pepper, and cumin on a baking sheet. Roast for 15-20 minutes until tender.
In a skillet over medium heat, cook the riced cauliflower in oil until golden and tender (about 15 minutes). Season to taste.
Sear the marinated steak on high heat for 6 minutes total for medium-rare. Let it rest before slicing.
