  • 8 ounces baby bella mushrooms
  • 1 tablespoon garlic
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy whipping cream
  • 4 medium shallots
  • 4 tablespoons unsalted butter
  • Freshly grated parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • Kosher salt and freshly ground black pepper to taste
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon Creole Cajun seasoning (to taste)
  • 1 cup vegetable oil (for frying shallots)
  • 2 tablespoons all-purpose flour

Instructions

  1. Prepare the shallots: Heat vegetable oil in a pan over medium heat. Fry thinly sliced shallots until golden brown and crispy. Set aside.
  2. Blanch the green beans: Boil salted water and blanch green beans for 3-4 minutes until tender-crisp. Transfer to an ice bath.
  3. Make the creamy mushroom sauce: In a skillet, melt butter. Sauté mushrooms until browned. Add garlic, flour, chicken broth, lemon juice, Dijon mustard, thyme, salt, pepper, and simmer until thickened. Stir in heavy cream.
  4. Assemble: Mix blanched green beans with mushroom sauce in a baking dish. Top with half of the fried shallots and parmesan cheese.
  5. Bake at 350°F for about 25 minutes until bubbly; sprinkle remaining shallots on top before serving.
