  • ¼ cup granulated sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • ½ teaspoon coarse kosher salt
  • 3 large eggs
  • ½ cup heavy cream

Instructions

  1. Preheat the oven to 350ºF (175ºC). Combine Biscoff cookie crumbs, melted butter, brown sugar, and salt in a bowl.
  2. Press the mixture firmly into a 9-inch pie plate to form the crust.
  3. Steam the sliced carrots until tender (about 20-30 minutes).
  4. Blend the cooked carrots with honey, sugar, water, vanilla extract, and salt until smooth.
  5. In another bowl, whisk eggs and heavy cream; then combine with the carrot puree.
  6. Pour the filling into the crust and bake for 45-55 minutes until set.
  7. Let it cool before refrigerating for at least four hours before serving.
