  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix together flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup of this mixture for topping.
  2. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, sugar, flour, lemon juice, and zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle with reserved crumb mixture.
  5. Bake for an additional 20-25 minutes until the filling is set and the top is golden. Allow to cool completely before chilling in the refrigerator for at least an hour.
