  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter (melted)

  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 tablespoons cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, melted butter, and salt. Press half of this mixture into the prepared baking dish to form the crust.
  3. In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, and cornstarch until smooth. Pour over the crust.
  4. Sprinkle the remaining crumble mixture on top and bake for about 38 minutes or until golden brown.
  5. Allow to cool completely in the pan before slicing into squares.
