  • 4 cloves garlic (minced)
  • ½ tsp salt
  • ½ tsp oregano
  • ½ tsp crushed red pepper flakes
  • ¼ tsp smoked paprika
  • ¼ tsp ground black pepper
  • ½ cup sun-dried tomatoes (roughly chopped)
  • ½ to 1 cup vegetable broth
  • 2 15-oz cans butter beans (drained)
  • 1 cup chopped fresh spinach
  • 1 cup heavy cream (or half-and-half)
  • ½ cup grated parmesan cheese
  • 2 Tbsp chopped fresh basil

Instructions

  1. In a large sauté pan over medium heat, melt 2 tablespoons of unsalted butter. Add minced garlic, salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper. Cook for about 2 minutes until fragrant.
  2. Stir in sun-dried tomatoes and your choice of vegetable broth along with the drained butter beans. Cook uncovered for approximately 5 minutes to allow flavors to meld.
  3. Remove from heat and fold in chopped spinach until wilted. Stir in heavy cream, grated parmesan cheese, and fresh basil until creamy and well combined. Serve warm.
