  • 1 cup sugar
  • 1/2 cup softened unsalted butter
  • 1/2 cup mascarpone cheese
  • 3 large eggs
  • 4 medium-sized apples, peeled and sliced
  • 1 teaspoon cinnamon
  • 1 cup oats
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon lemon juice
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a round cake pan.
  2. In a large bowl, cream together butter and sugar until fluffy. Add mascarpone cheese and mix until smooth. Incorporate eggs one at a time, then add flour, baking powder, vanilla extract, and salt.
  3. In another bowl, toss sliced apples with cinnamon and lemon juice.
  4. Pour half the batter into the prepared pan, layer spiced apples on top, then spread remaining batter before adding the crumble topping made from oats, brown sugar, flour, and melted coconut oil.
  5. Bake for about 1 hour and 15 minutes or until golden brown. Let cool slightly before serving.
