  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Combine the sliced onions, bell peppers, cherry tomatoes, garlic, olives, and optional capers in a bowl. Drizzle with olive oil and sprinkle with oregano, paprika, salt, and pepper. Toss to coat.
