  • 1 pound chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup long-grain rice (basmati or jasmine)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or yellow)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 2 cups chicken broth
  • Olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or basil, for garnish

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with salt, pepper, oregano, paprika, and cumin. Cook until browned (5-7 minutes), then remove from pan.
  2. In the same skillet, add more olive oil; sauté onion and garlic until fragrant (3-4 minutes). Add bell pepper and cook for another 2 minutes.
  3. Stir in rice and toast lightly for about a minute. Add diced tomatoes and chicken broth; bring to a simmer.
  4. Return the chicken to the skillet; stir well and cover to cook on low for 20-25 minutes until rice is tender.
  5. Stir in olives and feta; fluff rice with a fork before serving. Garnish with fresh herbs.
