  • 1 small onion, chopped
  • 16 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup raw walnut halves
  • 1 ¼ cups cooked pearled barley
  • 1 cup cooked pinto or black beans
  • ½ cup panko breadcrumbs
  • Vegan Worcestershire sauce

Instructions

  1. Sauté the onion and mushrooms in a large pan over medium-low heat until golden and liquid has evaporated (about 15 minutes). Add garlic and spices.
  2. Preheat oven to 400°F and line a baking sheet with parchment paper.
  3. In a food processor, pulse walnuts until coarsely crumbled. Add sautéed vegetables, barley, beans, nutritional yeast, Worcestershire sauce, breadcrumbs, salt, and pepper. Process until mixed but still chunky.
  4. Form patties using about ½ cup of mixture each (yields about 8 burgers). Brush with Worcestershire sauce if desired.
  5. Bake on the prepared sheet for 30-35 minutes, flipping halfway through.
