  • 1 lb turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the sausage rounds and brown for 4–5 minutes. Remove from skillet.
  2. In the same skillet, sauté diced onion and bell pepper for 3–4 minutes until tender. Stir in minced garlic and cook for an additional 30 seconds.
  3. Add smoked paprika and black pepper; stir in uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; return the browned sausage to the pan and mix well.
  5. Bring to a boil, cover, reduce heat to low, and simmer for about 20–22 minutes until rice is tender.
  6. Let rest for 5 minutes off the heat before fluffing with a fork.
