  • 14 oz chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced chicken sausage and cook until lightly browned, about 4-5 minutes. Remove from pot and set aside.
  2. In the same pot, sauté minced garlic for 30 seconds until fragrant.
  3. Stir in elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a boil, then reduce heat to medium-low and simmer covered for 8-10 minutes until pasta is tender.
  4. Reduce heat to low; stir in cheddar cheese, mozzarella cheese, and butter until melted and creamy.
  5. Return chicken sausage to the pot; mix well and heat through for another 1-2 minutes.
