  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 2 cups fresh cheese tortellini (or ravioli)
  • 4 cloves garlic, minced
  • 4 tbsp butter
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tbsp fresh basil or parsley, chopped

Instructions

  1. Season chicken with salt and black pepper. In a large pot over medium-high heat, melt 2 tablespoons of butter. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove from pot.
  2. In the same pot, melt remaining butter and sauté minced garlic until fragrant (about 30 seconds). Stir in crushed red pepper flakes.
  3. Pour in chicken broth; scrape any bits off the bottom. Add heavy cream and bring to a gentle simmer.
  4. Stir in tortellini and cook for 4-6 minutes until tender.
  5. Return chicken to pot, mix in Parmesan cheese until melted. Cook for an additional 2-3 minutes.
