  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 6 sheets phyllo pastry
  • ¼ cup melted butter or olive oil
  • ¼ cup honey
  • ½ tsp red chili flakes

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix crumbled feta, ricotta, and optional thyme until well combined.
  3. Cut each phyllo sheet in half lengthwise and cover with a damp towel.
  4. Brush one strip of phyllo with melted butter or olive oil, place about 1 tablespoon of the cheese filling at one end, fold sides inward, and roll tightly.
  5. Place seam-side down on the baking sheet and brush tops with more butter or oil.
  6. Bake for 15-20 minutes until golden brown.
