  • 1 (3-5 lb) whole chicken (giblets removed)
  • 1 medium onion (peeled and halved)
  • 2 tablespoons avocado oil (or olive oil)
  • 1 ½ teaspoons salt
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 425ºF (218ºC) and prepare a roasting pan.
  2. Let the chicken sit at room temperature for about 30 minutes.
  3. Pat the chicken dry and place it breast side up in the roasting pan.
  4. Stuff the cavity with onion halves and optional garlic cloves or lemon wedges.
  5. In a bowl, mix oil, salt, smoked paprika, onion powder, thyme, garlic powder, and black pepper into a paste.
  6. Coat the entire chicken with the seasoning mixture.
  7. Roast for about 70-90 minutes until the internal temperature reaches at least 165ºF (74ºC). Baste once or twice if desired.
  8. Let the chicken rest for five minutes before carving.
