  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus more for dusting)
  • A tiny dash of orange food coloring (optional)
  • 2 tablespoons fresh chives (finely chopped)

Instructions

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then remove from heat and cover for 10 minutes.
  2. Prepare an ice bath while the eggs sit. After 10 minutes, transfer eggs to the ice bath for cooling.
  3. Once cooled, gently crack and peel the eggs under running water.
  4. Halve the eggs lengthwise and scoop out yolks into a bowl.
  5. Add mayonnaise, mustard, salt, pepper, paprika, and optional food coloring to the yolks. Mash until smooth.
  6. Pipe the mixture back into egg whites using a piping bag.
  7. Create pumpkin ridges using a knife or toothpick and insert chive pieces as stems.
  8. Dust with paprika and chill for at least 30 minutes before serving.
