  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 4 sweet onions, thinly sliced
  • 2 cups freshly grated mozzarella cheese
  • 2 sheets frozen puff pastry, thawed
  • Fresh sage leaves
  • Kosher salt & black pepper, to taste
  • Turkey bacon, chopped (or plant-based bacon)
  • Grated Parmesan cheese, for topping

Instructions

  1. Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry on a floured surface and place it on parchment-lined baking sheets.
  2. In a skillet over medium heat, cook turkey bacon until crisp (or use plant-based bacon). Remove and set aside.
  3. In the same skillet, add sliced onions with salt and pepper; caramelize over medium-low heat for about 25–30 minutes until golden and soft.
  4. Mix ricotta and pumpkin in a bowl; season with salt and pepper. Spread this mixture on the pastry, layer with caramelized onions, mozzarella cheese, and bacon.
  5. Scatter fresh sage leaves on top, brush pastry edges with an egg wash (egg + water), then bake for 25–30 minutes until golden brown.
  6. Finish with grated Parmesan while warm before serving.
