  • 1 cup brown sugar
  • 1 cup all purpose flour
  • 1/4 tsp salt
  • 1 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups granulated white sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup canned pumpkin puree
  • 3/4 cup buttermilk, at room temperature

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, mix cold butter, brown sugar, flour, and salt for the streusel topping until crumbly.
  3. In another bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  4. Combine melted butter, granulated sugar, eggs, vanilla, pumpkin puree, and buttermilk in a large mixing bowl until smooth.
  5. Gradually fold the dry mixture into the wet ingredients until just combined.
  6. Fill muffin cups two-thirds full with batter and top with streusel mixture.
  7. Bake for about 20 minutes or until a toothpick comes out clean.
