Ingredients

Scale
  • 1 small onion (grated or finely diced)
  • 1 ½ pounds very lean ground beef
  • 1 cup breadcrumbs (like panko)
  • 2 large eggs
  • 2 tablespoons Worcestershire sauce
  • 2 cups cranberry sauce
  • 1 tablespoon freshly squeezed lemon juice
  • 1/3 cup tomato ketchup
  • 3 tablespoons packed brown sugar
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix grated onion, ground beef, breadcrumbs, eggs, Worcestershire sauce, salt, and pepper until well combined.
  3. Shape the mixture into small balls (about one inch in diameter) and place them on the prepared baking sheet.
  4. Bake for approximately 20 minutes or until browned and cooked through.
  5. While the meatballs are baking, prepare the sauce by whisking together cranberry sauce, tomato ketchup, brown sugar, and lemon juice in a saucepan over medium heat until simmering.
  6. Once cooked, combine the meatballs with the warm sauce in the saucepan and let them simmer for an additional few minutes before serving.
