  • 2 cups cherries (washed, pitted, and halved)
  • 1 1/3 cups white granulated sugar
  • 2 large eggs
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola or vegetable oil
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch-process cocoa powder
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and spread out halved cherries; sprinkle with sugar and roast for about 10 minutes.
  2. Reduce oven temperature to 325°F and prepare an 8×8 inch baking pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, salt, and cornstarch.
  4. In another bowl, beat together sugar and eggs until fluffy (about 5 minutes).
  5. Gently mix in melted butter, oil, and vanilla extract.
  6. Fold in dry ingredients until just combined; then add half of the roasted cherries and chocolate chips.
  7. Pour batter into prepared pan and bake for 40–50 minutes until edges are set but center is slightly underdone.
  8. Allow to cool completely before slicing.
