  • 89 medium starchy potatoes, thinly sliced
  • 1 head garlic, cut the top off
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter, plus more for greasing the baking dish
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Roast garlic wrapped in foil for 30 minutes.
  2. Grease a baking dish with butter. Peel and thinly slice the potatoes.
  3. Layer sliced potatoes in the dish.
  4. In a saucepan, combine cream, milk, butter, half of the parmesan, thyme, nutmeg, salt, and pepper over medium heat until mixed.
  5. Mash roasted garlic cloves into a paste and stir into the cream mixture.
  6. Pour the creamy mixture over potatoes and cover with foil.
  7. Bake for 40 minutes. Uncover, add remaining cheeses on top, and bake for an additional 30 minutes until golden brown.
