  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup grated parmesan cheese (divided)
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice the potatoes using a mandoline slicer for even cooking.
  4. Layer the potato slices upright in the prepared dish.
  5. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until blended.
  6. Squeeze out roasted garlic cloves into a paste and mix into the creamy mixture.
  7. Pour the cream mixture over potatoes evenly.
  8. Cover with foil and bake for about 40 minutes.
  9. Remove foil, sprinkle remaining cheeses on top, and bake uncovered for an additional 30 minutes until golden brown.
  10. Let cool slightly before serving.
