  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon (for filling)
  • 1/2 tsp nutmeg (for filling)
  • 1/4 tsp ground cloves (for filling)

  • 6 tbsp salted butter, cubed (for caramel)
  • 1/2 cup + 1 tbsp heavy cream (for caramel)
  • Pinch of flaky sea salt (for caramel)
  • 1/2 cup granulated sugar (for crumble)
  • 2 and 3/4 tsp cinnamon (for crumble)
  • 1/4 tsp nutmeg (for crumble)
  • 1/8 tsp allspice (for crumble)
  • 1/8 tsp ground cloves (for crumble)
  • 1/4 cup salted butter, melted (for crumble)
  • 1/4 cup light brown sugar, packed (for crumble)
  • 1 and 1/2 tbsp granulated sugar (for crumble)
  • 1/2 cup + 1 tbsp all-purpose flour (for crumble)
  • 3/4 tsp cinnamon (for crumble)
  • Pinch of salt (for crumble)

Instructions

  1. To make the cookie dough, cream softened butter with sugars until smooth. Add vanilla and eggs, mixing until just combined. Gradually incorporate flour, baking soda, baking powder, salt, and spices. Chill dough for 30 minutes.
  2. Prepare the apple filling by cooking diced apples with butter, brown sugar, cinnamon, nutmeg, and cloves in a medium pan for about 15 minutes until tender. Cool before using.
  3. For the salted caramel sauce, melt sugar in a saucepan until golden brown; stir in butter and heavy cream until smooth. Let cool slightly.
  4. Preheat oven to 365°F (185°C). Roll chilled dough into balls and bake on lined sheets for 10-12 minutes.
  5. Once cooled, fill each cookie with apple filling, add crumble topping, and drizzle with salted caramel.
