  • 2 acorn squash
  • ½ pound ground turkey sausage (or chicken)
  • 1 tablespoon olive oil
  • ½ large onion (diced)
  • 3 cups kale (chopped)
  • 1 tablespoon garlic (minced)
  • 2 stalks celery (chopped)
  • ½ large apple (chopped)
  • Fresh herbs: thyme, sage, rosemary
  • Salt and black pepper
  • 2 tablespoons walnuts or pecans
  • ½ cup crumbled feta cheese

Instructions

  1. Preheat your oven to 400°F and line a cookie sheet with parchment paper.
  2. Halve the acorn squash lengthwise and scoop out seeds. Place cut side down on the sheet and bake for about 20 minutes until fork-tender.
  3. In a skillet over medium heat, cook the turkey sausage until browned. Remove from pan.
  4. Add olive oil and sauté diced onions for 4-5 minutes. Stir in kale, garlic, celery, chopped apple, and herbs; cook for another 4-5 minutes.
  5. Scoop some flesh from the baked squash into the mixture for added sweetness and texture.
  6. Stuff each squash half generously with the filling; return to oven for an additional 15 minutes.
  7. Top with crumbled feta cheese and nuts; bake for another five minutes until golden.
