  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

  • 1 onion, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. In a bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat. Brown meatballs for about 5 minutes until golden.
  3. Sauté chopped onions in the same pot until translucent (3-4 minutes).
  4. Add chicken broth and bring to a boil; then reduce to simmer.
  5. Gently add meatballs back into the pot and simmer for about 15 minutes.
  6. Stir in heavy cream and fresh spinach; cook until spinach wilts (about 2 minutes).
