  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box of corn muffin mix (8.5 ounces)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate zucchini thoroughly and squeeze out excess moisture.
  3. In a large bowl, mix drained zucchini, onion, half of the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, pepper, and corn muffin mix until well combined.
  4. Pour the mixture into a greased baking dish and top with remaining cheddar cheese.
  5. Bake for about 50 minutes or until golden brown and set in the center.
  6. Let cool for 10 minutes before serving.
