  • 4 cups vegetable broth
  • 1/2 cup nutritional yeast
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 clove garlic, minced

Instructions

  1. In a large pot, bring vegetable broth to a gentle boil. Gradually whisk in polenta and stir continuously for 5-7 minutes until thickened.
  2. Remove from heat and mix in nutritional yeast, oregano, basil, salt, and pepper until well combined.
  3. In a skillet over medium heat, sauté garlic in olive oil until fragrant. Add cherry tomatoes and spinach; cook until tomatoes are soft and spinach is wilted.
  4. Preheat oven to 375°F (190°C). In a greased baking dish, layer half of the polenta mixture at the bottom, followed by the sautéed tomatoes and spinach. Top with remaining polenta.
  5. Bake for 25-30 minutes until golden on top.
