  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 10 oz cremini mushrooms, sliced
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, grated
  • 1/2 cup Gruyère cheese, grated
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet over medium heat, melt butter and olive oil. Sauté the onion until soft, about 5 minutes.
  3. Add garlic and mushrooms; cook until browned, about 8 minutes. Season with thyme, salt, pepper, and grape juice if using.
  4. Stir in cream cheese and Parmesan until combined; fold in Gruyère until melted.
  5. Add one beaten egg to the mixture for binding.
  6. On a floured surface, unroll puff pastry and cut diagonal strips along each side.
  7. Fill the center with the mushroom mixture and fold strips over alternately to create a braid.
  8. Transfer to the baking tray and brush with remaining beaten egg.
  9. Bake for 20–22 minutes until golden brown; cool slightly before slicing.
