  • 6 medium-small Yukon gold potatoes (about 1 1/2 pounds), peeled and thinly sliced (1/8-inch thick)
  • 4 cups thinly sliced onions (sliced crosswise)
  • 3/4 cup grated Gruyere cheese, divided (1/2 cup and 1/4 cup)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper (or black pepper if that is what you have)
  • 1 teaspoon of butter to butter the gratin or casserole dish
  • 1/3 cup stock (chicken, beef, or vegetable stock; use vegetable stock for vegetarian option)
  • 1 teaspoon finely minced fresh rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a sauté pan, heat olive oil over medium-high heat and caramelize onions until golden brown (15-20 minutes).
  3. In a large bowl, toss sliced Yukon gold potatoes with olive oil, grated Gruyere, Parmesan cheese, salt, and white pepper.
  4. Butter a gratin dish, layer caramelized onions at the bottom, then arrange potato slices on top. Pour stock over the layers and sprinkle remaining cheese.
  5. Cover with foil and bake for about 50 minutes until fork-tender. Remove foil and broil for an additional 5 minutes for a crispy top.
  6. Let rest for 10 minutes before serving.
