  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 red bell pepper, sliced
  • 1 cup snap peas, trimmed
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water and pat dry; season with salt and pepper.
  2. Wash and prepare all vegetables: trim asparagus, slice bell pepper, rinse snap peas, mince garlic and ginger.
  3. In a bowl, whisk together soy sauce, cornstarch, and a tablespoon of water.
  4. Heat vegetable oil in a large skillet over medium-high heat; add garlic and ginger for about 30 seconds until fragrant.
  5. Add shrimp in a single layer; cook for 2-3 minutes until pink and opaque. Remove from the pan.
  6. Stir-fry asparagus and bell pepper for about 2-3 minutes until slightly softened; then add snap peas.
  7. Return shrimp to the pan along with the sauce mixture; stir to combine and cook until the sauce thickens.
  8. Serve over rice or noodles; garnish with sesame seeds or green onions if desired.
