8 thick slices of sourdough bread
3 balls fresh mozzarella (each 125g), sliced thin and dried
8 sun-dried tomatoes, dried and chopped
4 generous tablespoons pesto
Butter, as required
Instructions
Prepare all ingredients: Slice the mozzarella thinly and dry lightly to avoid sogginess.
Assemble the sandwiches: Spread about two tablespoons of pesto on one side of each slice of sourdough. Layer mozzarella slices followed by sun-dried tomatoes. Top with another slice of bread, pesto side down.
