  • 8 thick slices of sourdough bread
  • 3 balls fresh mozzarella (each 125g), sliced thin and dried
  • 8 sun-dried tomatoes, dried and chopped
  • 4 generous tablespoons pesto
  • Butter, as required

Instructions

  1. Prepare all ingredients: Slice the mozzarella thinly and dry lightly to avoid sogginess.
  2. Assemble the sandwiches: Spread about two tablespoons of pesto on one side of each slice of sourdough. Layer mozzarella slices followed by sun-dried tomatoes. Top with another slice of bread, pesto side down.
  3. Cook until golden brown: In a large skillet over medium heat, melt a little butter. Cook sandwiches until golden brown on one side (approximately 3-4 minutes). Flip gently and add more butter if needed, cooking until the other side is browned and cheese is melted.
  4. Serve warm: Let the sandwiches rest for a minute before cutting in half to keep the cheese intact.
