  • 4 large organic sweet potatoes
  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked + drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Peel and cube the sweet potatoes, then boil in water until tender (about 15-20 minutes). Drain and transfer to a mixing bowl.
  2. Add olive oil, almond milk, vanilla extract, butter, brown sugar, cinnamon, nutmeg, and allspice to the sweet potatoes. Mash until smooth.
  3. Fold in soaked raisins and vegan marshmallows into the mixture.
  4. Spread half of the sweet potato mixture in a greased baking dish followed by half of the pecans. Layer on the remaining sweet potato mix and top with remaining pecans and a drizzle of maple syrup.
  5. Preheat oven to 350°F (175°C) and bake for about 45 minutes until golden.
