  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet over medium heat, brown 1 pound of ground beef. Add 1 diced onion and 1 minced garlic clove; sauté until fragrant.
  2. Stir in 1 can of drained corn, 1 can of rinsed black beans, and 1 can of diced tomatoes with green chilies. Season with chili powder, cumin, paprika, and salt; simmer for 5 to 7 minutes.
  3. In another bowl, mix an 8.5 oz box of corn muffin mix with 1 large egg and 1/3 cup milk until just combined.
  4. Pour the beef mixture into a greased baking dish and spread the cornbread batter over the top.
  5. Bake at 375°F (190°C) for 25 to 30 minutes until golden brown.
  6. Sprinkle with shredded cheddar cheese and bake for an additional 3 to 5 minutes until melted.
