  • 1 1/2 cups grated carrot
  • 1 cup grated zucchini
  • 1/2 cup walnuts, chopped
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 8 oz reduced-fat cream cheese
  • 1 cup icing sugar
  • 1 1/2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together eggs, brown sugar, canola oil, honey, and vanilla until smooth.
  3. Fold in grated carrot, zucchini, and chopped walnuts.
  4. In another bowl, whisk flour, baking powder, ground ginger, and baking soda. Gradually add to the wet mixture until just combined.
  5. Pour into a greased 9×13 inch baking dish and bake for about 25 minutes or until a toothpick comes out clean.
  6. While cooling slightly, beat together cream cheese, icing sugar, and lemon zest for frosting.
  7. Once cooled completely, frost the bars and slice them into squares.
