  • 1 kg carrots, peeled and sliced
  • 1 medium onion, cut into eighths
  • 4 cloves garlic, smashed
  • 3 cm fresh ginger, thinly sliced
  • 2 red chilies (one for the soup, one for topping)
  • 3 tbsp miso paste
  • 1.6 L vegetable stock
  • Vegetable oil for roasting
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (180°C fan).
  2. Prepare your vegetables: Peel and slice carrots; cut onion; smash garlic; slice ginger; chop one chili.
  3. Roast reserved carrot peels seasoned with salt and vegetable oil for about 10 minutes until crispy.
  4. Combine remaining veggies on a roasting tray, season with salt and pepper, drizzle with oil, and roast for about 35 minutes.
  5. While roasting, prepare spicy oil: heat vegetable oil in a saucepan, add sliced ginger and chili for 1 minute, then add mixed seeds and cook until fragrant.
  6. Blend roasted vegetables with miso paste and vegetable stock until smooth.
  7. Simmer soup on medium heat for around 5 minutes.
  8. Serve hot topped with crispy carrot peels, spring onions, and drizzle of spicy oil.
