  • 1/4 cup fresh cilantro
  • 1 tablespoon fresh oregano (or basil)
  • 2 tablespoons fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple vinegar (or apple cider vinegar)
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili flakes (optional, for heat)
  • 2 large sweet potatoes, peeled and cut into chunks
  • 1/4 cup unsalted butter (or olive oil for dairy-free)
  • 1/2 cup heavy cream or milk (or coconut milk for a dairy-free option)
  • 1/4 teaspoon cinnamon (optional, for extra flavor)

Instructions

  1. Boil cut sweet potatoes in water until tender (15-20 minutes).
  2. Blend parsley, cilantro, oregano (or basil), lemon juice, olive oil, vinegar, garlic, chili flakes, salt, and pepper until smooth for the green sauce.
  3. In a skillet over medium-high heat, sear seasoned steaks for 4-5 minutes per side. Let rest before slicing.
  4. Drain sweet potatoes and mash with butter (or olive oil), cream (or coconut milk), salt, pepper, and cinnamon until creamy.
