  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse and pat dry the Cornish game hens.
  2. In a large bowl, mix bread crumbs, onion, celery, carrots, optional raisins and nuts, garlic powder, thyme, paprika, salt and pepper. Add chicken broth and melted butter; mix until combined.
  3. Stuff each hen with the mixture without overfilling. Secure openings if necessary. Drizzle with olive oil and season with salt and pepper.
  4. Place hens breast-side up in a roasting pan. Brush with white grape juice or apple juice for added flavor.
  5. Roast for about 1 hour and 10 minutes or until the internal temperature reaches 165°F (74°C). Allow to rest for about 10 minutes before serving.
