  • 34 fresh peaches
  • 1 cup blueberries
  • ¼ cup pepitas
  • 4 lemons (for juice)
  • 2 Tbsp + 2 tsp honey
  • ¼ cup olive oil
  • Cracked black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Spread pepitas on a baking pan and toast for 5-6 minutes until golden.
  2. In a bowl, whisk together lemon juice, honey, olive oil, and black pepper; set aside.
  3. Chop kale into bite-sized pieces, massage with olive oil and juice from one lemon for about 5 minutes until softened.
  4. Rinse and chop peaches into bite-sized pieces; rinse blueberries.
  5. Combine massaged kale with peaches and blueberries in a large bowl.
  6. Drizzle with vinaigrette and toss gently to combine. Serve topped with toasted pepitas.
