  • 1 whole turkey (fresh and natural)
  • 1/2 cup melted butter
  • 2 cups dry white grape juice
  • 2 cups chicken or turkey stock
  • 1 cup softened butter
  • 2 tablespoons fresh sage, stem removed and chopped
  • 2 tablespoons fresh rosemary, stem removed and chopped
  • 1 tablespoon fresh thyme, stem removed and chopped
  • 1 whole lemon, zested (preferably organic)
  • 4 cloves garlic, minced
  • 3 teaspoons sea salt

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Pour 2 cups of water into the roasting pan.
  3. In a saucepan, combine melted butter, white grape juice, and stock.
  4. Mix softened butter with herbs, lemon zest, garlic, and salt.
  5. Rub herb mixture under the skin of the turkey; spread remaining over the top.
  6. Stuff cavity with aromatics if desired; tie legs together.
  7. Cover with cheesecloth dipped in butter mixture.
  8. Roast the turkey while basting every 20-30 minutes until internal temperature reaches 180°F – 185°F (82°C – 85°C).
  9. Remove cheesecloth during the last half hour for browning.
  10. Let rest for 15 minutes before carving.
