- 1 whole turkey (fresh and natural)
- 1/2 cup melted butter
- 2 cups dry white grape juice
- 2 cups chicken or turkey stock
- 1 cup softened butter
- 2 tablespoons fresh sage, stem removed and chopped
- 2 tablespoons fresh rosemary, stem removed and chopped
- 1 tablespoon fresh thyme, stem removed and chopped
- 1 whole lemon, zested (preferably organic)
- 4 cloves garlic, minced
- 3 teaspoons sea salt
- Preheat oven to 300°F (150°C).
- Pour 2 cups of water into the roasting pan.
- In a saucepan, combine melted butter, white grape juice, and stock.
- Mix softened butter with herbs, lemon zest, garlic, and salt.
- Rub herb mixture under the skin of the turkey; spread remaining over the top.
- Stuff cavity with aromatics if desired; tie legs together.
- Cover with cheesecloth dipped in butter mixture.
- Roast the turkey while basting every 20-30 minutes until internal temperature reaches 180°F – 185°F (82°C – 85°C).
- Remove cheesecloth during the last half hour for browning.
- Let rest for 15 minutes before carving.
