  • 2 tbsp butter (plus extra for bread)
  • 1 tbsp olive oil
  • 1 shallot (finely chopped)
  • 2 cups mushrooms (Portobello, Cremini, or Shiitake, sliced)
  • 1 tsp thyme (fresh or dried)
  • 1 tbsp balsamic vinegar (optional)
  • Salt and pepper to taste
  • 4 slices Swiss cheese (or Gruyère)
  • 8 slices bread (Rye, Sourdough, or Artisan)

Instructions

  1. Heat a skillet over medium heat and add sliced mushrooms. Cook for 5–7 minutes until moisture evaporates.
  2. Add butter and olive oil along with shallots; sauté for another 5 minutes until golden brown.
  3. Stir in thyme, balsamic vinegar if using, salt, and pepper. Set aside.
  4. Butter one side of each bread slice; layer cheese and mushroom mixture on unbuttered sides. Top with another slice of cheese and bread.
  5. Grill sandwiches in the skillet until golden brown and cheese melts, about 2–3 minutes per side.
