  • 1 and 1/2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 1/2 cup unsweetened applesauce
  • 3 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 1 and 1/2 teaspoons cinnamon powder
  • 1/4 teaspoon nutmeg powder
  • 1/4 teaspoon salt
  • 1 generous cup chopped peeled apple

Instructions

  1. Preheat your oven to 350°F (175°C) for even baking.
  2. In a large bowl, whisk the milk, eggs, maple syrup, applesauce, and vanilla essence until well combined.
  3. In another bowl, mix the oats, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently stir in chopped apples (and nuts if using).
  5. Spoon the mixture into greased muffin tins or silicone molds, filling them about three-quarters full. Optionally sprinkle coarse sugar on top.
  6. Bake for approximately 28 minutes until set and golden. Allow cooling slightly before transferring to a wire rack.
