  • 500 g butternut squash
  • 3 sprigs rosemary
  • 4 cloves garlic
  • 1 yellow onion
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g parmesan cheese
  • Juice of 1 lemon
  • 30 g walnuts
  • 75 ml milk
  • 50 g turkey strips
  • 1 ball of fresh mozzarella

Instructions

  1. Preheat your oven to 180ºC.
  2. Combine chopped butternut squash, sliced onion, garlic, rosemary, and olive oil on a baking tray. Toss to coat evenly.
  3. Roast the mixture in the oven for about 30 minutes until tender and golden.
  4. Blend the roasted vegetables into a smooth purée in a food processor.
  5. In a frying pan, heat olive oil and cook turkey strips until golden.
  6. Add the squash purée, water, and milk to the pan; stir in the gnocchi and simmer until tender (8-10 minutes).
  7. Mix in parmesan cheese and lemon juice, adjusting seasoning as desired.
  8. Top with torn mozzarella pieces and grill until melted (about 5 minutes).
  9. Garnish with remaining turkey strips, walnuts, and fresh parsley before serving.
