  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples
  • For the streusel: ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, mix egg, milk, melted butter, and vanilla until well combined.
  4. Combine wet and dry ingredients gently—don’t overmix!
  5. Fold in chopped apples carefully.
  6. For the streusel topping, mix flour, brown sugar, and cold butter until crumbly.
  7. Fill muffin cups two-thirds full with batter and sprinkle streusel on top.
  8. Bake for 18-22 minutes or until a skewer comes out clean.
  9. Let cool slightly before transferring to a wire rack.
