  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks. In a large pot, combine chopped apples, apple juice, and apple cider vinegar. Bring to a boil, then reduce to a simmer. Cover and cook for about 30 minutes until softened.
  2. Stir in brown sugar, vanilla bean paste, cinnamon, nutmeg, cloves, and salt until well combined.
  3. Blend the mixture using an immersion blender or transfer to a standing blender until smooth.
  4. Return the blended mixture to the pot and continue cooking uncovered over medium heat for another 30–45 minutes until thickened. Stir regularly to prevent burning.
  5. Once thickened, your Vegan Apple Butter is ready! Enjoy it warm or store it for later use.
